Iron Chef Wannabe

I love to cook but I don’t know if it loves me back. Hahaha. My sister and lately, my mom were the the official queens of the kitchen and now that they are in Las Vegas, the queen-wannabe (read: moi) has to step up. No more humba (cebuano’s adobo version) from Mom and no more pancit from Ate. Hello to fried egg, boiled egg, baked egg, grilled egg, raw egg, barbecued egg, microwaved egg and egg shake. So, I have to do something right? Or else, baka maghahanap ng Sarah Geronimo Ruffa G ang JLC ko!
One of my officemates had given me these oblong upo-like vegetables from his farm. Sosyal at may farm ang mokong. I asked him what they were. He told me it’s called Mexican Squash? A what? Hindi naman siya mukhang squash. Ampalaya, puede pa! So, out of modesty, I took them home.
While I was driving home, I was thinking really hard what to do with those so called squash. Alangan naman itapon ko, di ba? Sabi nga ng mga tao dito, “Wag kayong magtapon ng pagkain, madaming tao sa Africa ang hindi kumakain”. Sagot ko naman,” Eh bakit ba, kung hindi namin yan itapon, may makakain na sila? Teka lang, mabalik tayo… naisip ko:” Alas, I have bacon and chicken at home!” Di ba may pa “alas-alas” pa akong nalalaman.
So ladies and gentlemen, without further ado, I present to you “Mexican Squash Chicken with Bacon”. Or, is it Chicken with Mexican Squash and Bacon?Basta I just made up this dish. Hindi naman sguro ito nakakapoison. Bahala na! Kayo na ang humusga. Hahaha
